7 things to do with leftover Thanksgiving turkey

Ingredients: 2/3 cup minced sweet onion; 1/2 cup green bell pepper, chopped; one and a half teaspoons of dried oregano; 1 teaspoon of ground cumin; 1 teaspoon olive oil, 2 minced garlic cloves, 1 can (16 oz.) Kidney beans and 1 large northern beans, rinsed and drained, 1 can crushed tomatoes, 1 can chicken broth, 1/2 cup water, 2 tablespoons brown sugar, 2 tablespoons chili powder, 1/2 teaspoon pepper, 3 cups diced cooked turkey breast.

Preparation: Sauté the onion, pepper, oregano and cumin in oil; then add the garlic and let it cook for 1 more minute. Add the beans, tomatoes, broth, water, sugar, chili, and pepper. Once boiling, cover and simmer for 1 hour. Finally add the turkey.

7. Turkey pozole

Make an easy version of turkey pozole. Ingredients: 2 dried ancho or pasilla chili peppers, 1 clove of garlic, 2 tablespoons of tomato paste, 2 tablespoons of olive oil, 1 medium onion, sliced; 15 ounces white corn (traditional pozole includes hominy, but it takes much longer to cook), 8 cups turkey broth or chicken broth, 2 cups shredded leftover cooked turkey meat, salt and pepper.

Preparation: Remove the seeds from the chilies, toast them, speaking the chiles in hot water, about 5 minutes, drain them and reserve half a cup of the water. Process the chiles with the water, garlic and tomato paste.

Cook the onion in a pot with a little oil over medium heat until transparent. Add the chili, stir, and let it thicken, about 4 minutes. Add corn, broth, and meat; Season with salt and pepper; and simmer for about 15 minutes.
